Butter Dipped Pear Muffins

INGREDIENTS:

  • 2 Cups Fresh Pears, pealed and chopped

  • 1 Cup Sugar, divided

  • 1 Stick Butter, melted and cooled

  • 2 Eggs, slightly beaten

  • 1 Teaspoon Vanilla

  • 1 ½ Cups All-Purpose Flour

  • 1 Teaspoon Baking Soda

  • 1 Teaspoon Baking Powder

  • ½ Teaspoon Salt

  • ½ Cup Walnuts, coarsely chopped

  • 1 Teaspoon Cinnamon

  • ½ Teaspoon Nutmeg, ground

  • ½ Teaspoon Allspice, ground

  • 3 Tablespoons Butter, hot and melted

DIRECTIONS:

  1. Preheat oven to 350 degrees.

  2. Grease muffin tins or line with paper cups.

  3. In large bowl, toss pears with ¾ cup of sugar. Set aside.

  4. In separate bowl, blend cool melted butter, eggs and vanilla.

  5. In a third bowl, combine flour, baking powder, soda and salt. Stir in nuts.

  6. Stir egg mixture into pears. Sprinkle flour mixture over pear mixture and stir to blend.

  7. Spoon into prepared muffin cups and bake 20 minutes or until tester comes out clean.

  8. Turn out onto shallow rack.

  9. In a small shallow bowl, mix cinnamon, nutmeg and allspice with remaining ¼ cup of sugar.

  10. When cool enough to handle, dip each muffin top first in the hot melted butter then in the spice mixture.

  11. Serve warm.

YIELD:

  • 10 to 12 Muffins
