Grill:
4 ears of corn on the cob
(15 minutes husk-on (trimmed!), 400F; shuck; 5 min unshucked at 500F to get caramelized bits)
While it's grilling, mix
1/4 c mayonnaise
1.5t lime juice
1/2 t chili powder
pinch of cayenne
1/4 t kosher salt
or replace the last four items with mayo + some tajin seasoning and maybe a bit of lime juice.
Separately mix
2 oz finely grated Cotija cheese
2 T finely chopped cilantro
Spread the mayo mix on the corn; roll in the cotija mix; sprinkle with a little Tajin if you like; serve.

Heat
1T butter (100 cal)
in a large cast-iron skilled on med-high and cook
1 lb (454g) frozen corn (436 cal) (96 calories per 100 g)
for 5-8 minutes until it starts to brown. Add
1 t prechopped garlic (5 cal)
and cook 30s more. Let cool, and transfer to a mixing bowl.
While the corn is cooking, mix
1/4 c mayonnaise (140 cal) 35 cal per 1 Tbsp Hellman's light mayo)
1.5t lime juice (2 cal) (8 cal per oz or per 2 Tbsp)
1/2 t chili powder
pinch of cayenne
1/4 t kosher salt
and separately,
2 oz finely grated Cotija cheese (160 cal) 80 cal per 1 oz or 29 g)
2 T finely chopped cilantro (0)
Also cut thin wedges of
1 lime (0)
Serve in small cups: corn, perhaps with a little Tajin, then a dollop of the mayo mix, and a spoonful of the cheese mix, topped with some Tajin for color and a lime-slice tucked in the edge.
