Zenna’s Zuppa Toscana Soup, BY JELES

Ingredients:

1 lb mild Italian Sausage

6 slices thick-cut bacon

2 cups Beef broth

6 cups of Chicken broth

1 small onion, diced

3 cloves fresh garlic, minced

3 cups of cauliflower florets

1 cup heavy whipping cream

3 cups fresh spinach

2 cups of kale

1/2 tsp Xanthan gum

Salt and pepper to taste

1/2 tsp of crushed red pepper flakes

Shredded parmesan cheese for garnish


Instructions:

In a Large Soup Pot or a dutch oven

Brown your sausage and bacon together

Suggestion: Cut your bacon into bite sized pieces

Once your meat is cooked, add in broth, onions, garlic, and cauliflower

Cover and cook on medium heat for about 15-20 minutes, until the cauliflower is tender

Once the cauliflower is softened, add in heavy cream, Kale and spinach

Cook for about 5-8 minutes, until spinach and kale is soft

Now add xanthan gum and stir well (if you want it thicker add another ½ tsp)

Now add salt and pepper to taste

Serve with a sprinkle of parmesan cheese and crushed red pepper flakes
