Ginny's Garlic Chicken & Veggies, BY JELES

Ingredients:

1 1/2 pounds of chicken breasts cut into 1'' pieces

3-4 tbsp extra virgin olive oil

1 1/2 tsp Italian seasoning

1/2 tsp crushed pepper

4 tsp of minced garlic

1 1/2 tsp Goya Adobo

1 tsp Mrs Dash ~ Herb (salt free)

Salt and Pepper to taste

1/2 cup tomatoes chopped

3 1/2 cups broccoli florets

2 1/2 cups baby spinach

1/2 cup of fresh parmesan (and little extra to top off each dish)

6 oz cream cheese

Instructions:

In a large Skillet, over medium heat: start off by adding 3 tablespoons olive oil ~ (if you need more add another tablespoon)

Add the chopped chicken breasts, season with Italian seasoning, Mrs Dash, Goya Adobo (seasoning) crushed red pepper, salt & pepper

Sautee for 6- 8 minutes until chicken is golden and cooked through

Add the garlic and sauté for another couple of minutes

Add the tomato, broccoli, spinach, parmesan and cream cheese

Cook for another 5 minutes or until the broccoli is cooked through

(I love my broccoli with a little crunch...al dente just like my pasta)

Top it off with a sprinkle or two of fresh grated Parmesan and
