SKYLER’S STROMBOLI DELIGHT, BY JELES

Ingredients:

1 ¼ cups mozzarella cheese, shredded

4 tbsp. almond flour

3 tbsp. coconut flour

1/2 tsp. Baking powder

1 large egg

1 tsp. Italian seasoning

1 tsp. Mrs. Dash Herb (salt free)

½ tsp. Garlic powder

½ tsp Goya Adobo

4 slices ham (or your favorite sliced deli meat)

12 slices of Pepperoni

4-5 slices of cheddar cheese(or your favorite cheese)

Salt and pepper to taste


Instructions:

Preheat your oven to 400*

In a small saucepan melt your mozzarella cheese, stirring

Medium bowl combine almond flour, coconut flour, baking powder and seasonings and mix well, then place melted mozzarella on top and begin stirring it well

When the cheese has had a chance to cool down, add your egg, mix well

When everything is combined, transfer it to a flat surface with some parchment paper and lay a sheet of parchment paper on top

Use a rolling pin or your hand to flatten it out

Use a pizza cutter or knife to cut diagonal lines beginning from the edges of the dough to the center, leave a row of dough untouched about 4 inches wide

Alternate laying sliced meat, pepperoni and cheddar (or your favorite cheese) on that uncut stretch of dough

Then lift one section of dough at a time and lay it over the top, covering your filling

NOTE: Bake it for about 15 minutes then check and turn the cookie sheet around and bake another 5 minutes until you see it has turned a golden brown color
