Jeles’ Oven Roasted Pork with Brussel Sprouts

Ingredients

3- pound pork loin

4 tablespoon of butter

1/2 cup of beef or chicken broth

1/4 water

FOR THE RUB

  • 1 teaspoon paprika

  • 1 tablespoon of Mrs. Dash (salt free)

  • 1 teaspoon garlic powder

  • 1/2 teaspoon of Goya Adobo

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon dried thyme (some extra to dress your pan or cast iron pan)

  • 1 teaspoon Fresh Parsley (some extra to dress the Cast iron pan)

  • salt and fresh ground pepper, to taste

  • 1/4 cup of Parmesan (optional) **

VEGETABLES

1 pound Brussels sprouts, (you can cut them in half) I leave them whole

8-10 medium mushrooms sliced in threes

1/2 Green Pepper (sliced) You can do a whole one if you like...

1/2 medium red onion

Instructions

  • Preheat oven to 375˚F.

  • In a small mixing bowl combine paprika, garlic powder, onion powder, thyme, parsley, Mrs. Dash, Goya Adobo, salt and pepper.

  • Lightly spray pork loin with cooking spray. This will make it easier for the spice mix to stick.

  • Take the spice mix and rub it all over the pork loin.

  • Place butter sliced at the bottom of the pan and add a little thyme, parsley and sliced onion to dress the pan...

  • Now add your broth, water and pour inside the pan...

  • Transfer pork loin to previously prepared pan, or your cast iron pan.

  • Place the cut mushrooms, green peppers, red onion and Brussels Sprouts all over the pan (around the pork)

  • Roast for 25 -35 minutes.

  • Pull out of the oven: Use a spoon, take the juice and pour over the pork, and veggies...

  • **NOW: Here is what I did... I took some fresh grated Parmesan and sprinkled it all over the pork and veggies :)

  • Place back in the oven and turn up the temperature to 425 for about 5-10 minutes.

  • Once the Parmesan is nice and toasted (as you can see in the picture) its ready!

  • Remove from oven and let rest 10 minutes.
