Jeles' Banana Nut Keto Bread

Ingredients:

2 cups of Almond Flour

1 tbsp Baking powder

1/4 cup Monk fruit

3 Eggs

1/4 tsp salt

1/2 tsp Xamtham Gum

1 tsp of Vanilla extract

1/4 cup Butter (measured solid, then melted)

1 tsp of Cinnamon

1/2 cup of Almonds or Pecans or Walnuts (choose what you love)

1 Cup of Bananas (Mashed)

1/2 cup of a green apple (chopped up fine) (optional)

Directions:

Preheat the oven to 350

Line a Small Loaf pan with parchment paper, with the paper hanging off the long sides

In a large bowl, stir together the almond flour, baking powder, xamthan gum, monk fruit, salt, cinnamon and mix well

Now add the melted butter, vanilla, bananas, apples and eggs. Mix well

Transfer the batter to the lined loaf pan

Bake the bread for about 55-60 minutes (each oven is different)

NOTE: make sure to check with toothpick to check if it comes out clean

Let the bread cool 10 minutes if you use parchment paper~ lift out of the loaf pan and place on plate or a cutting board to let it cool

Note: if you do NOT use parchment paper~leave loaf in pan for 20 minutes to completely cool then remove from loaf pan

ENJOY!!
