JELES' Keto Mounds & Almond Bars

Melted Lily's or Choco Zero milk chocolate or dark chocolate Chips

Coconut oil (1-2 tablespoons-divided)

3 cups Unsweetened shredded coconut flakes

1 cup Jeles' Keto condensed milk

*(Recipe below)*

Mix the shredded unsweetened coconut with condensed milk, mold into oblong shape using your hands, create 12 bars and place on a tray lined with parchment paper

Place them to freezer for 30 minutes

Meanwhile:

In a microwavable save bowl add Coconut oil (to melt chips) I use 1/2 to 1 Tablespoon of coconut oil to each bag of Chips

Microwave: 15-30 second burst in microwave, stir and place back in 15-30 seconds at a time...until completely melted

Stick Almonds in them and have Almond Joys!!

After 30 minutes in the freezer we can start to dip them in melted chocolate

IDEAS: Shape them in to balls, squares, use tiny tart pans...

Save a little bit of chocolate and drizzle the top!!

JELES' Condensed Keto Milk Recipe

Believe me, once you try this sugar-free condensed milk recipe, you’re going to want to have it on hand at all times. Great for any recipe that calls for condensed milk!!!

INGREDIENTS:

1 1/2 cups heavy whipping cream

1/2 cup Anthony's powdered Sweetener

2 tbsp butter

1/2 tsp vanilla extract

1/2 tsp xanthan gum

INSTRUCTIONS:

Medium Heat: In a large nonstick saucepan, add heavy whipping cream and bring to a boil

Reduce the heat to low and let simmer for 30 minutes

Be careful not continue to boil

You should see little bubbles along the edges the entire time

Remove from heat and whisk in the sweetener, vanilla extract and butter until dissolved

IMPORTANT:

Sprinkle the top FIRST with 1/4 tsp xanthan gum and whisk well to combine

Let cool for 5-10 minutes

NOTE: If it's not thick enough, whisk in the other 1/4 tsp of xanthan gum

ENJOY!!

I keep these in the Freezer and I enjoy eating them frozen

These can be stored up to 6 months in the freezer
