Jeles’ Italian Almond Tart “Keto”

Ingredients:

  • 2 cups Anthony’s Almond Flour

  • 2 tsp baking powder

  • 1 tsp grated lemon zest

  • 1 tsp pure Vanilla extract

  • 1 1/2 tsp of Almond extract

  • 1/4 tsp salt

  • 1/2 cup butter

  • 2/3 cup Monkfruit

  • 3 large eggs

  • 2 Egg whites

  • 1 cup ricotta cheese

  • 1/4 sour cream

  • 1/4 of chopped Almonds (for the inside)

  • 1/2 cup Sliced Almonds (for the topping)

Note: When finished and cooled: Anthony’s Powdered Sweetener (sprinkle on top)

Instructions:

Preheat the oven to 325* and grease a 9-inch springform pan

Line the bottom with parchment paper and spray the parchment paper

In a medium bowl, mix together the almond flour, baking powder, add a 1/4 of chopped almonds and salt

In a large bowl, beat the butter, monkfruit, ricotta, sour cream, egg whites, lemon zest and mix well

Add in the eggs, one at a time, and mix well, then add the almond extract and vanilla extract

Now: add the dry ingredients and mix well

Place the batter in the prepared pan and sprinkle the entire top with sliced almonds

Bake 35-45 minutes, until golden brown

Important: let cool 20-30 minutes

Sprinkle with Anthony’s powdered sweetener before serving (I usually just do the entire Tart before placing it on the table)
