Lemon Keto Muffins

Lemon "Keto" Muffins

Ingredients:

1/2 cup Coconut Flour

1 1/2 cups of Almond Flour

2 tbsp Baking powder

3/4 cup Monk fruit

1/4 teaspoon Xanthan Gum

3 Eggs

1 cup of Sour Cream

1/4 teaspoon almond extract

1/4 teaspoon of salt

1/2 cup Butter (measured solid, then melted)

3 tablespoons of Lemon juice

1 Entire Lemon (Zest)

OPTIONAL: 1/2 cup of pecans or your favorite nut... :)

Directions:

  1. Preheat the oven to 350*

  2. Spray Muffin pans really well

  3. In a large bowl, stir together the coconut flour, almond flour, salt, baking powder, monk fruit, xanthan gum, lemon zest and mix well (add pecans if you choose too)

  4. add the melted butter, sour cream, almond extract, lemon juice and eggs. Mix well

Important: Fill muffin pans 1/2 full

Bake Large Muffins for 25 -30 minutes (I use large muffin pan)

NOTE: if you make cupcake size muffins ~ bake for 15-20 minutes

Make sure to check with toothpick to check if it comes out clean

Let the Muffins cool 10 minutes before trying to remove muffins out of pan.

Makes 10-12 Large muffins or 20-24 cupcake size muffins
