Jeles’ Stawberry Coconut Keto Cheesecake

INGREDIENTS:

1/2 cup of Almond Flour

1/2 cup of Coconut Flour

1/3 cup of Shredded Coconut

1/2 cup of Butter (1 stick) melted

3 (8-oz.) blocks Cream Cheese, softened

16 oz. Sour Cream

1 tbsp. Monk Fruit

2 tsp. pure vanilla extract

3 large eggs

1 cup of Sliced strawberries

1/4 cup of chopped strawberries and add a 1 tsp of Monk Fruit and stir. (Set to the side)

DIRECTIONS:

IMPORTANT:

Do this first... Take a 1/4 cup of chopped strawberries and add a 1 tsp of Monk Fruit and stir well. (Set to the side)

  • Preheat oven to 300*

  • Make the crust: Grease an 9" spring form pan, and cover the bottom and edges with foil. In a medium bowl, mix together the flours, coconut, and butter. Press the crust into the bottom and a little up the sides of the prepared pan. Place the pan in the fridge while you make the filling.

  • Make the filling: In a large bowl, beat the cream cheese and sour cream together, then beat in the monk fruit and vanilla. Add the eggs one at a time, mixing after each addition. Now fold sliced strawberries into the mixture... NOW* Take the chopped strawberries with the juice from the sugar... and gently pour as you fold.

  • Spread the filling evenly over the crust.

  • Place cheesecake in a deep pan and set on middle rack of oven. Carefully pour enough boiling water into roasting pan to come halfway up sides of spring form pan. Bake for 1 hour and 15 minutes, until it only slightly jiggles in the center.

  • Turn off the oven ,open door and let Cheesecake set in the oven for about 45 minutes.

  • Remove pan from “Banho de Maria” (water bath) and take off foil, then let chill in the fridge for at least five hours or overnight. Slice and garnish with strawberries.

NOTE:

For the perfect cheesecake: Do not skip the “Banho de Maria” (water bath)

Wrap the bottom and sides of your spring form pan in a double layer of thick aluminum foil to protect it from any leaks, place inside a deep pan, carefully fill the pan with boiling water.

The hot water turns into steam, which guarantees even baking, and most importantly, no cracks
