Jeles’ Tiramisu Cheesecake
INGREDIENTS:
BASE:
4 eggs
1/2 cup MonkFruit
1/2 cup butter (softened)
1 cup Almond Flour
1/3 cup cocoa powder unsweetened
3 tablespoons of STRONG instant coffee
1/2 teaspoon baking powder
1/2 teaspoon salt
2 tablespoons rum extract
CHEESECAKE:
8 oz mascarpone cheese
2 Eggs
16 oz cream cheese
1/4 Heavy cream
1/2 cup MonkFruit
1/3 cup coffee (I use a strong Portuguese coffee or a nice bold Italian coffee)
1/4 cup rum (optional)
INSTRUCTIONS:
BASE:
Pre-heat the oven 350*
Beat the eggs and MonkFruit in a medium bowl
Add the butter and mix
Add the remaining ingredients and rum extract and mix
Place the mixture into a well greased 9’ spring pan
Bake for 20-25 minutes until firm.
Remove from the oven
Set aside to cool
CHEESECAKE:
In a large bowl, beat the cream cheese, mascarpone, heavy cream and 2 eggs, together until the mixture is smooth
Add the Monk Fruit, coffee and rum (if using rum) and mix until smooth
Spoon on top of the cake base then place in the fridge overnight to set.
Ingredients for Topping:
3/4 Heavy cream
3 tablespoons of Monkfruit
1 tablespoon cocoa powder unsweetened
1/4 cup of Lilly’s chocolate and slice into little pieces for the top ;)
Instructions for the Topping:
In a Medium bowl add Heavy Cream and 3 tablespoons of MonkFruit, 1 tablespoon cocoa powder unsweetened and beat till peaked :)
Pipe the cream on top of the cheesecake all the way around the top (leaving the middle for coco and chocolate)
Using a sieve, gentle cover the cream if you would like with the cocoa powder, shaking it over evenly
Top off with Lilly’s Chocolate slivers <3
