Jeles’ Anise & Pecan “Keto” Loaf
Ingredients:
1/4 cup Coconut Flour
1 1/2 cups of Almond Flour
1 tbsp Baking powder
1/3 cup Monk fruit
3 Eggs
1/4 cup of Sour Cream
1 teaspoon of Vanilla extract
1/3 cups of chopped pecans (walnuts, almonds which ever you chose) **Save a little to sprinkle on top.
2 tablespoons of Cinnamon *see below
2 Tablespoons of Monk fruit *see below
1 1/2 teaspoon of Anise Seed
1/2 cup Butter (measured solid, then melted)
1/2 cup Almond Milk (unsweetened)
Directions:
Preheat the oven to 350
Line a Small Loaf pan with parchment paper, with the paper hanging off the long sides
In a large bowl, stir together the coconut flour, almond flour, baking powder, monk fruit and pecans, mix well
add the melted butter, almond milk, sour cream, vanilla and eggs. Mix well
in a small bowl mix 2 tablespoons of monk fruit with 2 tablespoons of cinnamon and mix well, place to the side
NOTE~ Transfer 1/2 the batter to the lined pan, sprinkle over half of the cinnamon mixture
Add remaining batter, and sprinkle the cinnamon mixture (use a knife and make your swirl)
Then sprinkle the rest of the mixture on top with some chopped pecans *Optional
Bake the bread for about 55-60 minutes
NOTE: make sure to check with toothpick to check if it comes out clean
Let the bread cool 10 minutes if you use parchment paper~ lift out of the loaf pan and place on plate or a cutting board to let it cool
Note: if you do NOT use parchment paper~leave loaf in pan for 20 minutes to completely cool then remove from loaf pan
ENJOY!!
