Jeles’ Anise & Pecan “Keto” Loaf

Ingredients:

1/4 cup Coconut Flour

1 1/2 cups of Almond Flour

1 tbsp Baking powder

1/3 cup Monk fruit

3 Eggs

1/4 cup of Sour Cream

1 teaspoon of Vanilla extract

1/3 cups of chopped pecans (walnuts, almonds which ever you chose) **Save a little to sprinkle on top.

2 tablespoons of Cinnamon *see below

2 Tablespoons of Monk fruit *see below

1 1/2 teaspoon of Anise Seed

1/2 cup Butter (measured solid, then melted)

1/2 cup Almond Milk (unsweetened)

Directions:

  • Preheat the oven to 350

  • Line a Small Loaf pan with parchment paper, with the paper hanging off the long sides

  • In a large bowl, stir together the coconut flour, almond flour, baking powder, monk fruit and pecans, mix well

  • add the melted butter, almond milk, sour cream, vanilla and eggs. Mix well

  • in a small bowl mix 2 tablespoons of monk fruit with 2 tablespoons of cinnamon and mix well, place to the side

NOTE~ Transfer 1/2 the batter to the lined pan, sprinkle over half of the cinnamon mixture

Add remaining batter, and sprinkle the cinnamon mixture (use a knife and make your swirl)

Then sprinkle the rest of the mixture on top with some chopped pecans *Optional

  • Bake the bread for about 55-60 minutes

  • NOTE: make sure to check with toothpick to check if it comes out clean

Let the bread cool 10 minutes if you use parchment paper~ lift out of the loaf pan and place on plate or a cutting board to let it cool

Note: if you do NOT use parchment paper~leave loaf in pan for 20 minutes to completely cool then remove from loaf pan

ENJOY!!
