CAMILLE's CUSTARD PIE, BY, JELES

Ingredients:

Crust:

1/2 cup Anthony's Almond flour

1/2 cup Anthony's Coconut flour

1/4 tsp salt

3 tbsp Monk Fruit

1/4 cup butter, melted

1 large egg, beaten

1 large egg white

Ingredients:

Custard Filling:

1 large egg yolk

2 large eggs, beaten

1/3 cup Monk Fruit

1 1/4 cup heavy whipping cream

1/4 cup water

2 tsp vanilla extract

1/4 tsp salt

3 sprinkles nutmeg

3 sprinkles of cinnamon

Directions:

Preheat oven 400*

Use a pie plate or a tart pan 9", spray well and set aside

In a medium sized bowl, combine almond flour, coconut flour, salt and monk fruit

Mix in melted butter and mix well

Mix in egg until a dough forms

Take dough and press the dough into the bottom and sides of the pie plate or the tart pan

Use a fork to poke the bottom of the crust a few times

Brush the crust with egg white

Bake for 8-10 minutes until lightly browned

Remove from oven (set aside)

Now LOWER the heat to 320*

Mix all filling ingredients and pour into the crust

Sprinkle nutmeg and cinnamon on top

Place back in the oven for 30-35 minutes

Until top of the custard is firm with just a slight jiggle in the middle

Cool to room temperature or you can chill for 1-2 hours in the refrigerator

This Custard can be stored in the refrigerator for 3-4 days
