LaRee’s Creamy Broccoli Soup, By Jeles
INGREDIENTS:
4 tbsp Salted Butter
4 oz Cream Cheese
4 cups Broccoli (cut into florets)
3 tsp Minced Garlic
1/2 onion chopped
Salt & Pepper to taste
3 1/2 cups Broth (Chicken, Vegetable broth, or Bone broth)
1 cup Heavy cream
3 cups Cheddar cheese (pre-shredded)
INSTRUCTIONS:
Part One:
In a large pot over medium heat, add butter and sauté garlic, onion for about a minute
Add the broth, heavy cream, and chopped broccoli
Increase heat to bring to a boil
Next reduce heat and simmer for 15-20 minutes, until broccoli is tender
Part Two:
Remove about 1 cup of the broccoli and set aside
Part Three:
Use an immersion blender to puree the Soup (you can use the hand Blender and do it right in the Pot)
Now add the cream cheese first and stir until blended, now add the shredded cheddar cheese a 1/2 cup at a time and stirring constantly, and continue to stir until melted
IMPORTANT:
Make sure to keep it at a very low simmer
Remove from heat immediately once all the cheese melts
Add the reserved broccoli florets back to the soup and its ready to serve
Place in bowls and sprinkle cheese (optional)
