INGREDIENTS:
For the Loaf:
1 ¾ cups Anthony's Almond flour
¼ cup Oat Fiber
⅔ cup blueberries
3 eggs
½ cup sour cream
¼ cup heavy cream
½ cup Anthony's confectioners Sugar
2 teaspoons baking powder
1 ½ teaspoons vanilla extract
1 Lemon zest
Pinch of salt
For the Crumb Topping:
⅔ cup Anthony’s Almond flour
3 tablespoons walnuts, chopped
3 tablespoons butter, melted
¼ teaspoon ground cinnamon
¼ cup Truvia Brown Sugar
⅛ teaspoon ground nutmeg
Frosting:
3 tablespoons Anthony’s confectioners sweetener
2 ounces Cream cheese softened
1/2 teaspoon Vanilla extract
2 tablespoons Heavy cream
Mix Anthony’s powdered sweetener with cream cheese in a small bowl
Add the vanilla extract and heavy cream and stir until smooth
Drizzle on top once Loaf is cooled
INSTRUCTIONS:
Preheat oven to 325*
Add all the ingredients for the crumb topping to a bowl, except the butter and mix together
Pour in the melted butter and mix until combined, set aside
Add the flour, baking powder, oat fiber and salt to a bowl and whisk together, set aside
Large mixing bowl add all the remaining ingredients, except the blueberries, and mix using a hand mixer for about 30 seconds
Add in the dry ingredients and continue mixing
Gently fold in the blueberries, then pour into a 9 x 5 nonstick loaf pan that's been sprayed with nonstick spray
* If your pan isn't nonstick, I would line it with parchment paper
Bake for 45-60 minutes or until a toothpick, comes out clean
NOTES: Oat Fiber is important in this recipe, I use Lifesource Foods Oat Fiber 500, Oat Fiber is not the same as Oat Flour.
