Sandi’s NY Style Berry Keto Cheesecake

INGREDIENTS:

4 (8-ounce) packages of Cream cheese (Softened)

1 1/2 cups of Monk fruit

1 Tablespoon pure Vanilla Extract

1/4 cup of Almond flour

3/4 cup of Heavy Whipping cream

2 Extra- large eggs

1 cup of chopped berries (blueberries, raspberries and strawberries)

DIRECTIONS:

preheat oven to 350*

Make the crust:

2 cups of chopped pecans

1/2 tsp of Cinnamon

1/3 cup of Truvia Brown sugar

4 tbsp Butter (melted)

**Mix all together in a bowl, after take the mixture and place it in the **well buttered spring form pan. Press the crust into the bottom and a little up the sides of the prepared pan

**Generously butter an 9" spring form pan

Bake in the oven for 10-15 minutes

NOW: Take the Spring pan and (I use a thick foil) cover the bottom and edges with foil all the way up to the pan. Set aside

NEXT STEP:

Make the filling: In a large bowl, beat the cream cheese, eggs, heavy cream, monk fruit, flour and vanilla.

Now fold the chopped berries into the mixture...

Spread the filling evenly over the crust.

Place cheesecake in a deep pan and set on middle rack of oven. Carefully pour enough boiling water into roasting pan to come halfway up sides of spring form pan. Bake for 1 hour and 15 minutes, until it only slightly jiggles in the center.

Turn off the oven ,open door and let Cheesecake set in the oven for about 15 minutes.

Remove pan from “Banho de Maria” (water bath) and take off foil, then let chill in the fridge over night (IN the Spring pan) (make sure to wrap the top with saran wrap).

**The longer it sits in fridge the better it is.

NOTE:

For the perfect cheesecake: Do not skip the “Banho de Maria” (water bath)

Wrap the bottom and sides of your spring form pan in a double layer of thick aluminum foil to protect it from any leaks, place inside a deep pan, carefully fill the pan with boiling water.

The hot water turns into steam, which guarantees even baking, and most importantly, no cracks
