Flossie's Peppermint Snowball "Keto" Cookie, BY JELES
Ingredients:
1 cup unsalted butter room temp
2/3 cup Anthony's Confectioner’s powdered sweetener
2 1/4 cup Anthony's Almond Flour
1 medium egg
1/2 tsp salt
1/2 tsp Xanthan gum
1 tsp peppermint extract
1/4 cup of chopped sugar free peppermint candies
red food coloring
3/4 cup Lily's White Sugar free baking chips
additional powdered sugar for coating
Instructions:
Beat butter and powdered sugar together until light and fluffy
Add egg and mix well
Mix in flour, salt, xanthan gum and extract just until combined
Add food color a few drops at a time until desired color is achieved
Stir in white baking chips and chopped sugar free peppermint candies
IMPORTANT: Refrigerate dough for 30 minutes
Remove from fridge and roll into balls and freeze for 15 minutes (important)
Preheat oven to 375 degrees
Line a large baking sheet with parchment paper (DO NOT SPRAY)
Scoop out one tablespoon of dough at a time and form into a ball
Place on cookie sheet
Bake for 8-10 minutes
You do not want the cookies to get more than very lightly browned on the bottom
Let cool for 5 minutes and sprinkle with powdered sugar (set aside)
Now wait until completely cooled...
Fill a small bowl halfway with powdered sugar
Double coating for the perfect cookie!
Drop cookies one at a time into the bowl and turn until coated in powdered sugar
For Freezing do not roll in the Powdered sugar
