Jeles' Creamiest Key Lime Pie

NOTE: Jeles' Holiday Crust Ingredients below 📷

Ingredients:

1 cup heavy cream

4 large egg yolks

1/4 cup freshly squeezed lime juice

1 tsp lemon extract

2-3 Limes for zest

1/4 cup butter out of fridge, cut into slices

1/4 tsp Xanthan gum

3/4 cup of Monkfruit

1 cup sour cream

Instructions:

Over medium heat take a large saucepan and combine heavy cream, egg yolks, lime juice, and lime zest

Constantly stir as it cooks, until mixture thickens

Remove from heat, add butter and lemon extract

Sprinkle with xanthan gum and mix well together

now you want to add your Monkfruit stirring everything well

Stir in your sour cream and mix until you have no lumps

Now take your mixture and pour into your already baked pie shell

NOTE: (my advise is make the night before and just let it set over night in the fridge) YUMMY!!!

Before serving top with whipped cream and ENJOY!!!

Jeles' Holiday Pie Crust

Ingredients:

1 1/2 cups almond flour

1/4 cup Monkfruit

1/4 tsp salt

1/4 tsp vanilla extract

1/4 cup butter melted

Instructions:

Preheat oven at 325*

In a medium bowl, mix together almond flour, monkfruit, and salt

Stir in melted butter and vanilla extract until dough comes together

Note: (it will be somewhat crumbly)

Turn mixture out into your favorite pie dish

Press firmly with fingers into bottom and up sides

Use a flat bottomed glass to even out the bottom

Use a tooth pick or a fork to prick holes all over the bottom before baking

Bake until edges are golden brown 10-15 minutes

(don't over bake it)

Remove from oven once its golden brown and set aside

Let the pie crust cool about 10-15 before adding fillings and baking again
