Garlic Roasted Radishes, By Jeles

INGREDIENTS:

4 medium sized bunches of radishes

1 1/2 tablespoon olive oil

1 tsp salt

1/4 tsp pepper

1 tsp minced garlic

1 tsp minced fresh thyme

Fresh Parsley (for dressing)

1/3 cup of Parmesan cheese

INSTRUCTIONS:

Pre-heat oven to 425*

Cut the greens off the radishes, wash well

Cut in half, or if they’re really large cut in quarters

On a large Sheet pan, toss together the radishes, olive oil, salt, pepper, garlic and thyme

Sprinkle with fresh Parmesan cheese and place in the oven

Back for 30 minutes until radishes are caramelized and fork tender

Once finished, sprinkle again with fresh Parmesan cheese and garnish with fresh parsley
