Mama’s Moist Almond Cake, By Jeles

INGREDIENTS:

1 1/2 cups Anthony’s Almond Flour

½ cup Anthony’s Coconut Flour

½ Almond Milk

2 tsp Almond extract

1 tsp xanthan gum

1 tbsp baking powder

1/4 tsp salt

1 cup Monkfruit

¾ cup Unsalted butter

4 eggs

¾ cup of sliced Almonds

DIRECTIONS:

Preheat your oven to 350*

Grease a 9x13 cake pan or a Bunt Cake pan, (set aside) In a large mixing bowl add butter, monk fruit and mix till smooth Add one egg at a time mixing welland until fully blended Now add your almond milk, extract, mix well

In a medium bowl add all your dry ingredients and mix until well combined

Final STEP: Slow add dry ingredients to the wet ingredients while continuing to mix the batter, until creamy

Now fold in the almonds and place cake batter in a well greased cake pan Place in the oven in the middle rack

Bake for 30-45 minutes (or until the toothpick comes out clean) Let cake completely cool before removing from pan

Serve with whip cream and fresh berries
