MILES’ UNFORGETTABLE MEATLOAF, BY JELES

Ingredients:

1 lb ground beef

1 lb ground pork

1 cup ground pork rinds

4 ounces of mushrooms (finely chopped)

Salt

2 tsp Mrs Dash (Herb)

2 tsp garlic

2 tsp onion powder

3/4 tsp black pepper

1 large egg

6 ounces Swiss grated (divided 4 oz and 2 oz)

2 ounces of fresh grated Parmesan

2 tbsp butter

1 large white onion cut in half lengthwise and thinly sliced

1 tsp fresh thyme leaves


Instructions:

Preheat the oven to 350*

Line a large rimmed baking sheet with parchment paper

In a large skillet over low heat, melt the butter

Once melted, add the sliced onions and stir to coat

Sprinkle with salt, and a dash of garlic and cook, stirring frequently, until the onions are soft and golden brown, 15 minutes

Stir in the thyme leaves, cook one more minute, then remove from heat and set aside

In a large bowl, combine the ground meat, pork rinds, mushrooms, onion powder, Mrs Dash (Herb), garlic, pepper, an additional 1/2 teaspoon salt, 2 oz of grated Swiss cheese and 2 oz fresh grated Parmesan

Stir in the egg and half of the caramelized onions

Now time to get your hands dirty Use your hands to thoroughly combine

Transfer to the prepared baking sheet and form into a loaf

Bake 50 minutes

Remove from the oven and now top with the shredded cheese, the remaining onions and sprinkle some fresh thyme on top

Last Step: Place back in the oven to melt the cheese, about 5 minutes

ENJOY!!!
