Pamela’s Smothered Pork Chops, BY JELES

Ingredients:


8 strips bacon , uncooked

4 boneless pork chops (nice size-4 should be about 2lb)

2 tsp Mrs Dash ~ Herb Seasoning (Salt free)

Salt

Pepper

9 oz mushrooms, sliced

1 tsp of garlic powder

2 tsp garlic, minced

fresh thyme, I use about 5-6 leaves

1 tablespoon olive oil

1 tsp Xanthan Gum (thickening)

2/3 cup chicken broth

1/2 cup heavy cream


Instructions:


Chop bacon into smaller bites


In a large cast iron skillet or regular skillet, cook on medium heat until the bacon is cooked


Remove bacon from the pan to a plate, leaving the fat in the skillet


Season pork chops with Mrs. Dash, garlic powder, salt and pepper

In the same pan, on high-medium heat, cook pork chops 4 minutes on each side in bacon fat, until seared


Reduce heat to medium for cooking


Remove the pork chops and place them on a plate


Add sliced mushrooms and minced garlic to the same skillet


If you need to add 1 tablespoon olive oil


Season with salt

Sprinkle with fresh thyme leaves


Cook on medium for 5 minutes, stirring, until mushrooms soften


Sprinkle xanthan gum over the mushrooms, and stir

Add chicken broth and bring to boil, stirring often


Add heavy cream and stir until everything is smooth


Reduce heat to low


Add back the pork chops and the bacon

Cook on low heat, covered, until the pork chops are cooked through


Before serving, top pork chops with mushroom and bacon mixture and more fresh thyme leaves
