Jeles’ Orange Pecan “Keto”Bread

Ingredients:

1/2 cup plus 2 tbsp of Coconut Flour

2 ounces of Cream Cheese (room temperature)

2 tbsp of Heavy Cream

1 1/2 tsp of orange extract

1 1/2 tsp of Baking Powder

1/2 tsp salt

2/3 cup of Monk-fruit

1/3 Cup of Chopped Pecans

1 Large Orange (zest only)

4 tbsp of Orange (freshly Squeezed)

9 tablespoons of Unsalted Butter, melted

6 Eggs (Large)

Instructions:

Preheat oven to 325*

In a large mixing bowl, add the flour, baking powder, salt, sweetener and pecans... mix

Add the eggs, orange zest, fresh orange (freshly squeezed), orange extract, heavy cream and butter...mix together well

Line your Loaf pan with parchment paper **(I spray the pan lightly before adding my parchment paper)**

Pour the mixture into your lined 9×5 loaf tin

Bake for 60 minutes, it may need a few more minutes... I check mine after 45 minutes then I turn the Pan so it gets a nice golden brown color...

Use a toothpick and check the center to see if its fully baked... If The toothpick come out clean its ready!

Leave to cool for 10 minutes
