VICTORIA'S Birthday "Keto" Cake, BY JELES
1 1/2 cups Anthony's Almond Flour
1/2 cup Anthony's Coconut flour
2 tsp baking powder
1/4 tsp salt
3/4 cup butter
1 cup Anthony's granulated sweetener
4 large eggs
1/4 cup almond milk
1/4 cup of heavy whipping cream
2 tsp Vanilla extract
INSTRUCTIONS:
Preheat the oven to 350*
Spray and line two 8-inch pans with parchment paper and set aside
*NOTE: If you do this entire recipe in a 1/4 sheet pan, keep in mind it will take about an hour to bake*
In a mixing bowl, add your almond flour, coconut flour, baking powder and salt and mix well
Set aside
Using a hand mixer, cream your butter and sugar until fluffy, this may take about 5-8 minutes
Add the eggs in, one at a time, and beat well until fully
Add the almond milk, HWC and vanilla extract until combined
Add the dry ingredients and beat until creamy
Divide the batter evenly amongst the two cake pans, and smoothen out the tops
Bake for around 25-30 minutes, OR until a toothpick comes out clean
Allow the cakes to cool completely
(*NOTE: If you do this entire recipe in a 1/4 sheet pan keep in mind it will take about an hour to bake)
IMPORTANT: Note if you decide to make this entire batter in a 1/2 sheet pan you will need to bake it longer
Chocolate Frosting:
Suggest: I do double this recipe so I can have extra for the filling
Ingredients / Instructions:
1 cup unsalted butter, softened (8 oz)
½ cup heavy cream
½ cup unsweetened cocoa powder
1 teaspoon vanilla extract
1 cup Anthony’s powdered sweetener
Place the softened unsalted butter, heavy cream, cocoa powder, vanilla, and powdered sweetener in a medium bowl
Using a hand held mixer, beat on low to incorporate, then beat on medium about 1 minute, until frosting is light and fluffy
