Sweet Maria’s Snowball Cookies “Keto” By Jeles
INGREDIENTS:
1 stick salted butter, cold and sliced
pinch of salt
1 large Egg
1/2 cup Monkfruit
1 1/2 cups Anthony’s Almond flour
1 1/2 tsp Vanilla extract
1 cup sliced almonds (chopped) I use my Pampered Chef Chopper
Topping:
1/4 cup Anthony’s Confectioner sugar (to roll cookies after they are cooled)
INSTRUCTIONS:
Preheat oven 350*
Line the Cookie sheet with parchment paper (Do not spray)
Chop up your almonds to almost a powder form
In a large mixing Bowl add your almond flour, monkfruit, extract, salt and egg mix well
Now start adding the butter in slices as the mixer continues to mix...
Add the crushed Almonds and mix well
Take the dough and make 20 balls out of your dough, place on the parchment paper
Take the cookie sheet with the cookies and place in the freezer for 45 minutes
After 45 minutes remove from the freezer and place in the oven (freezing them is important)
Bake for 20-25 minutes (until a light golden color)
Once the 18 minutes or so have passed check the color of the cookies
Once the cookies are done pull out of the oven let them cool for 15 minutes
Now in a bowl or plate take the cookies and roll them in the confectioners sugar
Set aside and these will melt in your mouth ♥
You can also place the confectioner sugar in a zip lock bag with 8-10 cookies and seal the bag and you can coat them like this also
NOTE: These will freeze well
If you want to to freeze these you can just make sure not to powder them ahead of time
