Jeles’ Portuguese “Mariscada” Keto Style
INGREDIENTS:
2 tbsp Olive Oil (extra virgin)
2 tbsp Butter
1 medium Red Onion (diced)
Sea Salt (to taste)
5 cloves Garlic (minced) You can never go wrong with garlic... :)
2 cups White wine (low carb. wine)*
*Example~ Sauvignon Blanc, NOTE: dry wines are the lowest in carbohydrates, and this refreshing white is one of the driest and crispest around (and with only 3 grams of carbs per serving)
1 can of 28 ounces of Gluten free “Crushed Tomatoes”
1 1/2 cups Fish stock (clam juice)
1 tsp Old Bay Seasoning
1 tsp Goya Adobo
1 tsp Oregano~ dried will be fine
1/2 tsp Red pepper flakes
1 tsp Worcestershire Sauce
3-4 Dashes of Hot Sauce (optional) I like the #Kick
3 teaspoons Lemon Juice ( I like to use real lemons)
1 pound Shrimp (peeled and de-veined)
1 pound Mussels (raw)
12 Medium Clams (raw) (I like to use the smaller clams 20)
8-10 Large Scallops
1 Lobster tail (cut into small/medium squares)
2 tbsp Basil (fresh, chopped)
2 tbsp Cilantro (fresh, cut with hands for dressing the plate)
INSTRUCTIONS:
Heat in a large Pot (I use Cast iron “Dutch oven” pan) over medium-low heat. Add butter and olive oil until melted.
Stir in red onion with a pinch of salt. Cook for about 5 minutes, stir in garlic and cook for another minute.
Increase heat to high and stir in wine. Bring to a simmer.
Add crushed tomatoes, fish stock, old bay, oregano, goya adobo, Mrs. Dash, red pepper flakes, hot sauce and Worcestershire sauce.
Reduce heat to low and simmer for 15-20 minutes.
Increase heat to high and bring to a boil. Add shrimp, scallops and lobster tail, lemon juice and return to simmer and cook for 3 minutes. Remove shrimp, scallops and lobster and place too the side.
Add mussels in shell, and clams in shell. Cover and simmer until shell fish open (about 6 minutes).
Add shrimp back to Pot... I use my cast iron~Dutch Oven. Season with salt and pepper to taste and serve hot, topped with chopped fresh basil & cilantro.
