Sam’s Shepherd's Pie, BY JELES
INGREDIENTS: Shepard's Pie
2 cups of mashed Cauliflower *(see recipe below)
2 tbsp Olive oil
1 small onion (chopped small)
1/2 cup carrots
1/2 cup Green bell peppers (diced)
½ Red bell peppers (diced)
1/2 lb Ground lamb
½ lb Ground beef
1/2 tsp Sea Salt
1/4 tsp Black pepper
½ tsp of Goya Adobo
1 cup Beef Broth
1 tbsp Coconut aminos
2 tbsp Tomato paste
1/2 tbsp Italian Seasoning
1 tsp Mrs Dash (Salt free) Herb
Fresh Parsley to garnish
Mashed Cauliflower Recipe:
Ingredients: Mashed Cauliflower
1 large head Cauliflower (6 cups florets, cut off most of the stems)
2 tbsp Butter, cut into chunks
3 tbsp Cream cheese cut into chunks
3 tsp of Garlic, minced
3/4 tsp Sea Salt
Instructions: Mashed Cauliflower
Fill a large saucepan or pot with enough salted water to come right below a steamer basket fitted over it. Bring the water to a boil.
Place the cauliflower florets into the steamer basket and fit on top of the pan. Cover the basket with a lid.
Reduce water to a simmer and cook, covered, for 10-15 minutes, until cauliflower is very soft and mushy.
*FINAL STEP: Cauliflower Mashed
Place the cauliflower into a food processor/blender together with all other ingredients ~ Puree for a couple of minutes, until smooth
Scrape the sides occasionally
Adjust salt and pepper to taste
INSTRUCTIONS: Shepherd Pie
Preheat the oven to 400*
Cast iron skillet, heat oil over medium heat
Add the onions, carrots, and peppers, Sauté for 10 minutes, until lightly browned
Push the vegetables to the sides of the pan
Add the ground lamb, and ground beef, breaking apart with a spatula
Season with salt and pepper
Cook for 10 minutes, until the ground meat is brown
Stir in the broth, coconut aminos, tomato paste, Goya Adobo, Mrs Dash and Italian seasoning
Bring to a boil, then simmer, uncovered, for about 5 minutes, until most of the liquid evaporates thick sauce) Remove from heat
Drop spoonful's of mashed cauliflower over the pan and use a rubber spatula to spread evenly
Bake for 15 minutes, until the edges bubble
I place mine under the broiler for 3-4 minutes, until the edges are a golden color
