Jeles’ Spinach & Beef Casserole Keto Dish
1 tbsp extra virgin Olive Oil
1 1/2 pound ground beef
1 small red onion, finely chopped
2 garlic cloves, minced
1 tsp of paprika
4 dashes of hot Sauce
1 tsp of Mrs. Dash (salt free)
1 tsp of garlic powder
1 1/2 Goya Adobo
1/2 medium red bell pepper (chopped)
1/2 medium green pepper (chopped)
1 medium tomatoes (chopped in to small cubes)
4 ounces of fresh spinach
1 tbsp tomato puree
3 bay leaves
4 tbsp chopped fresh parsley (plus extra to serve)
1 tbsp fresh oregano or 1 tsp dried
1/4 tsp sea salt
1/4 tsp black pepper
2 cups Beef stock
8 oz of Mozzarella Cheese
Instructions:
Preheat the oven to 375*
Heat the olive oil in a cast iron frying pan or a pan that can be used on the top and in the oven.
Add the beef, Goya and Ms. Dash, garlic powder and fry for 6 minutes, breaking up the mince with a wooden spoon.
Drain the juices
Add the onion and garlic and fry for 4 minutes. Add the pepper, paprika and chilli and fry for a couple more minutes.
Add the chopped tomatoes, tomato puree, stock, oregano, bay leaves, salt and red & green pepper and simmer for about 20 minutes on a medium heat.
Lower heat and cook for a further 10 minutes until the sauce has thickened. and stir in the spinach and cook for about 3 minutes.
Add the Mozzarella to the top of the now cooked mixture and place in the oven and bake for 5-10 minutes until melted.
Once melted and a color that you like... remove from the oven, top with fresh parsley.
