Jeles' Sweet Nifty "Keto" Pretzels
Ingredients:
2 cups Almond Flour (Anthony's)
1 tbsp Baking Powder
2 tbsp Cinnamon powder
1 tsp of Vanilla extract
2 tbsp of Monk Fruit
2 Large eggs
5 tablespoons of cream cheese
2 2/1 cups of Shredded Mozzarella Cheese
For Brushing the Pretzel: Set a side 1/4 cup of melted butter
Topping:
In a small bowl mix 3 Tbsp of cinnamon with 2 Tbsp of Monk Fruit mix well (Set aside)
Take your melted butter and Brush each Pretzel with the melted butter and TOP off each Pretzel with Cinnamon & Sugar Mixture "Sprinkle"
Directions:
Preheat the oven to 375*
Line baking sheet with parchment paper
In a large bowl, stir together all the dry ingredients
IMPORTANT:
In a saucepan over low heat, combine mozzarella, cream cheese and continue to stir until all melted together
Next Step: Add 2 large eggs to the dry mixture in your large bowl and mix well. Add the cheese mixture and continue mixing until your dough starts to form.
Using your hands, divide the dough into 6 equal parts
Roll each portion into a long rope
Wet your hands with a little butter or oil to work the dough as you roll (this will make the dough easier to handle)
Fold each piece into the shape of a Pretzel (you can also shape them into Pretzel bites :)
Brush the top with Butter and sprinkle with Cinnamon mixture
Place the baking sheet in the middle rack of your oven and bake for 15 -20 minutes or so (each oven is different (so place timer for 15 minutes and keep an eye on the color... Golden brown is done :)
SERVE WARM and ENJOY!!!
