LeAnn's Lemon Cream Puffs, By Jeles
INGREDIENTS:
CREAM PUFFS:
1/2 cup butter (unsalted)
3/4 cup of water
1 cup of Anthony's Almond Flour
1 1/2 tbsp of Monk Fruit
4 Large Eggs
3 tsp Xanthan Gum
1 tbsp of Arrowroot
Anthony's Powdered Sweetener
CREAM PUFF FILLING:
1 cup of Heavy cream whipped to stiff peaks
8 oz Cream Cheese (softened)
1/4 cup Anthony's Powdered sugar
1/3 cup of Half & Half
2 tbsp Lemon juice
DIRECTIONS:
Preheat your oven to 425*
2 Cookie Sheet pans and add Parchment paper to both (set aside)
In a sauce pan over medium-high heat add butter, water, monk fruit and stir until melted and bring to a boil
Add your flour, xanthan gum and stirring quickly , until the dough pulls away and starts to form a ball
Remove from heat and place in a medium to large bowl and let cool about 5 minutes
Important for this next step: Do not use a mixer for this, spatula or wooden spoon
Mix in your Eggs one at a time making sure to fully combine each egg, now add your tablespoon of Arrowroot and mix well for about 3 minutes (set aside)
Add your dough to your pipping bag
Pipe out 2" mounds on your ready cookie sheet pan which has been lined with Parchment paper
Bake in the oven for 10 minutes then reduce heat to 340* (DO NOT OPEN OVEN) and bake for about 15-20 minutes longer or until a Golden color
Remove from oven and let cool
TO MAKE YOUR FILLING:
In a Bowl whip your heavy cream until stiff peaks, set aside
In another bowl beat your cream cheese until smooth
Add in your powdered sugar, half & half and lemon juice and continue to beat until well combined
Fold in your whipped cream until mixture is light and fluffy
Cut your cooled cream puffs in half and using a piping bag fill your cream puffs with your lemon cream filling
Sprinkle with Anthony's powdered sugar
