Jeles’ Sweet Lemon Poppy Seed Loaf “Keto”
Ingredients:
1 cup of Almond Flour
1/2 cup of Coconut flour
½ teaspoon of Baking Powder
½ cup of Monk-fruit
2 tablespoons of Poppy Seeds
2 Lemons (zest only)
3 tablespoons of Lemon Juice (I used 1 1/2 fresh lemon squeezed)
3 tablespoons of Unsalted Butter, melted
6 Eggs (Large)
Instructions:
Preheat oven to 350*
In a large mixing bowl, add the flour, baking powder, sweetener and poppy seeds... mix
Add the lemon zest, fresh lemon juice, and butter...mix together well
Add the eggs... mix well
Line your Loaf pan with parchment paper **(I spray the pan lightly before adding my parchment paper)**
Pour the mixture into your lined 9×5 loaf tin
Bake for 45-50 minutes.
When the loaf is cooked golden brown and springs back when touched
Leave to cool for 20 minutes
