Sherry's Berry "Keto" Scones, BY JELES

INGREDIENTS:

Scones

1 cup Anthony's Almond Flour

1/4 cup Anthony's Coconut Flour

3 tbsp Monkfruit

1/2 tsp baking powder

1/4 tsp Sea salt

1/4 cup Unsweetened almond milk

2 tbsp Coconut oil (melted)

1 large Egg

1 1/2 tsp Vanilla extract

1/2 cup Sliced Almonds

3/4 cup Berries

Glaze:

1 tbsp Coconut oil (melted)

1 tbsp Anthony's Powdered Sugar

3 tbsp Berries

1 tbsp Monkfruit

INSTRUCTIONS:

Preheat the oven to 350*

Line a baking sheet with parchment paper

In a medium bowl, combine almond flour, coconut flour, monkfruit, sea salt, and baking powder

In a small bowl, mix together coconut oil, almond milk, vanilla extract, and egg

Fold the wet mixture into the dry until a dough forms

NOTE the dough should be pliable, not crumbly or stiff add a little more almond milk, a teaspoon at a time, if it's dry

Fold the berries and almonds into the dough

Place the dough onto the parchment paper cookie sheet

Shape into a circle, about 1in thick

Cut into 8 wedges just like a pie slice

Move the pieces apart

Bake for about 20 minutes, until golden color

BERRY GLAZE:

Low to medium heat

Berry drizzle: In a small saucepan, add all glaze ingredients and continue to stir until a nice texture to drizzle with (stir until berries dissolve)

NON BERRY GLAZE:

1 tbsp Anthony's Powdered Sugar

1 tbsp Coconut oil (melted)

(stir these two ingredients until a thick drizzle for your scones)

When the scones are done baking, drizzle the glaze over them

Scones and glaze will firm as they cool

Let set for 30 minutes
