Sweet Maria’s “Keto” Lemon Bars
Ingredients:
FOR THE CRUST
2 cups of Almond flour
1/4 cup Monk fruit
1/4 tsp salt
1/2 cup melted butter
1 tsp Almond extract
1 tsp of lemon zest
Cooking spray *
Filling <3
4 large eggs
1/3 cup sour cream
8 ounces of Cream cheese (room temperature)
1/2 cup of fresh squeezed lemon juice
2 tsp lemon zest
1 tsp vanilla extract
1/2 cup of Almond Flour
1/2 cup of Monk Fruit
Directions:
Preheat oven to 350°
Take a 9 x 9 baking pan, spray lightly and add parchment paper and then grease with cooking spray again
In a large bowl, whisk together almond flour, Monk fruit, lemon zest and salt. Add melted butter, almond extract and stir to combine
Press mixture into prepared pan (even layer) bake until (light golden color) 12 minutes
(do NOT over bake the crust)
Let’s prepare the filling:
In a large bowl, combine eggs, sour cream, cream cheese, lemon juice, zest, and vanilla. Add almond flour and Monk fruit, and mix well
Pour filling over crust
Bake until filling doesn’t giggle about 15 minutes
IMPORTANT:
Please let it completely cool then place it in fridge for a couple of hours before cutting it into squares.
(You can sprinkle with Organic powder on top if you like) Optional you really do NOT need it trust me <3

Makes 12 nice size squares for smaller squares cut into 16 <3
OKAY... My secret, I cut them, wrap them and freeze them :) Then its a nice cold treat which will take you a bit longer to eat which means you enjoy it longer! :)
