Bill’s Sweet Keto Cinnamon Rolls, by Jeles

Ingredients:

3 cups of shredded mozzarella

1 1/2 cups of almond flour

3 oz of cream cheese

1 tsp vanilla extract

1 pinch of salt

2 eggs

1 tsp baking powder

1 tsp Xantum Gum

For the filling:

4 tsp butter

4 tbsp Monkfruit

3 tbsp cinnamon

2 tsp vanilla extract

OPTIONAL: 1 cup of crushed walnuts or pecans

For the frosting:

4 oz of cream cheese

2 tbsp butter

1/2 cup of Monkfruit

1 1/2 tsp vanilla extract

2 tbsp Heavy cream

INSTRUCTIONS:

Pre-heat oven to 355*

Melt the mozzarella and cream cheese in a non-stick pot over a low heat, continue stirring until cheese is melted

Now take off the stove and stir in the egg

Add the almond flour, baking powder, salt, xanthum gum and finally mix in the vanilla extract

Start to mix everything together using a spatula or a fork, mix well...

I use my hands to make a ball of smooth dough (can be easier if you lightly oil your hands first)

Divide the dough into 12 balls

*Form long rolls, then flatten out with your hands

*NOTE: (I use parchment paper and place each dough ball and fold over the long part of the parchment paper and use a rolling pin) Watch my Live on my page jeleszinhasjourney

Make the dough as thin as you can

Prepare your cinnamon filling: In a small microwavable bowl place all your ingredients in your bowl and place in the microwave for 20-25 seconds (stir well)

Spread the cinnamon paste over the flattened dough rolls (here is when I added crushed walnuts) You can use Pecans instead I didn’t have any at home ;)

Roll each into a bun and cut sideways in half

Now you have 12 buns which you place on a non-stick baking sheet or in a pie dish

If you want you can make them smaller and end up with 24 buns :)

Bake for 25-35 minutes

While the rolls are in the oven, prepare the frosting:

Medium bowl mix cream cheese, Monkfruit, butter, heavy cream and vanilla extract

Mix well, until smooth

Spread over the warm rolls and serve
