Jeles’ Berry Nut Keto Bread

Ingredients:

2 cup of Almond Flour

1/2 cup of Coconut flour

1 tablespoon of Cinnamon

1/2 teaspoon of Salt

1 1/2 teaspoons of Baking Powder

½ cup of Monk-fruit (for sweeter bread use 3/4 cup) I used 1/2 a cup in mine. :)

1 1/2 teaspoons Vanilla Extract

2 tablespoons of Sour cream

2 tablespoons of Heavy whipping cream

1/4 cup of Unsweetened Almond Milk or Coconut Milk

3/4 Pecans~ chopped (1/2 for the Batter) (1/4 cup for topping) ~ Optional

8 tablespoons of Unsalted Butter, melted

6 Eggs (Large)

1/4 cup of strawberries sliced

1/4 cup of Blueberries sliced in half

Instructions:

Preheat oven to 350*

In a large mixing bowl, add the flour, baking powder, salt, sweetener, cinnamon, pecans... mix well

Add the eggs, almond milk, vanilla extract, heavy cream, melted butter, sour cream ... mix together well

Fold in the strawberries and blueberries

Line your Loaf pan with parchment paper **(I spray the pan lightly before adding my parchment paper)**

Pour the mixture (it will be thick so use a spatula or spoon) into your lined 9×5 loaf tin

Top off with the 1/4 of Pecans chopped (optional)

Bake for 60-70 minutes use toothpick to check if the inside is baked through.. If The toothpick comes out clean its ready. If it needs a few more minutes leave in for another 5-10 minutes. (Each oven is different)

When the bread is cooked golden brown and springs back when touched its READY!

Leave to cool for 10 minutes before cutting
