Karen's Buttery Chicken, BY JELES

INGREDIENTS:

2 lbs chicken breast

2 tablespoons garam masala (a spice blend widely used in Indian cuisine)

3 teaspoons ginger

3 teaspoons minced garlic

5 oz plain Greek yogurt

1 tablespoon coconut oil

minced cilantro (dressing)

sliced fresh jalapeños (dressing)

Sauce:

3 tbsp. butter

1 onion

2 tsp ginger

2 tsp minced garlic

14.5 oz can crushed tomatoes

1 tbsp. ground coriander

1/2 tbsp. garam masala (a spice blend widely used in Indian cuisine)

2 tsp cumin

1 teaspoon chili powder

3/4 cup heavy cream

Salt to taste

INSTRUCTIONS:

Cut chicken into 2-inch pieces

In a large bowl add 2 tablespoons garam masala, 1 teaspoon grated ginger, and 1 teaspoon minced garlic

Add in the yogurt, stir until combined

Now add the chicken and with a wooden spoon stir well until the chicken is well covered with the mixture

Chill in the fridge for 30-40 minutes

SAUCE INSTRUCTIONS:

In a Blender place the onion, ginger, garlic, crushed tomatoes and spices and blend until smooth (set aside)

In a Large Skillet (I use my cast iron skillet)

Heat 1 tablespoon of oil over medium heat

Place the chicken along with the marinade in the skillet, browning the chicken this should take 3-4 minutes per side

Once browned, pour in the sauce and cook for 6 minutes

Stir in the heavy cream and butter, continue to cook another 2-3 minutes

Taste and add salt if needed

Serve over cauliflower rice

Garnish with minced cilantro and jalapeños
