Jeles’ Lemon Coconut Keto Cookies
Ingredients
1/4 cup Butter (softened)
2 oz Cream cheese (softened)
1/3 cup Monk Fruit (if you like it sweeter I would do 1/2 cup)
1 large Egg
2 tsp Lemon extract
1 tsp Baking powder
1/4 tsp Sea Salt
2 tbsp Sour cream (optional)
2 cups Almond Flour
1 cup Coconut Flour
2 tsp Lemon zest
1 tbsp Lemon juice
1/4 cup of Raw Coconut ( or unsweetened coconut) Optional
INSTRUCTIONS
Preheat the oven to 350 degrees. Line a large cookie sheet with parchment paper.
Use a hand mixer or stand mixer to beat together the butter, cream cheese, and sweetener, until it's fluffy and light in color.
Beat in the Lemon extract, salt and egg. Beat in sour cream.
Beat in the almond flour/coconut flour, 1/2 cup at a time and Baking powder.
NOTE: (The dough will be dense and a little crumbly, but should stick when pressed together.)
Use a spoon and place in your hand and roll into balls
Then press and shape into (50 cent size) cookie. Flatten with your palm.
Bake for about 15 minutes, until the edges are lightly golden.
Allow to cool.
