Jeles’ Lemon Coconut Keto Cookies

Ingredients

1/4 cup Butter (softened)

2 oz Cream cheese (softened)

1/3 cup Monk Fruit (if you like it sweeter I would do 1/2 cup)

1 large Egg

2 tsp Lemon extract

1 tsp Baking powder

1/4 tsp Sea Salt

2 tbsp Sour cream (optional)

2 cups Almond Flour

1 cup Coconut Flour

2 tsp Lemon zest

1 tbsp Lemon juice

1/4 cup of Raw Coconut ( or unsweetened coconut) Optional


INSTRUCTIONS

  • Preheat the oven to 350 degrees. Line a large cookie sheet with parchment paper.

  • Use a hand mixer or stand mixer to beat together the butter, cream cheese, and sweetener, until it's fluffy and light in color.

  • Beat in the Lemon extract, salt and egg. Beat in sour cream.

  • Beat in the almond flour/coconut flour, 1/2 cup at a time and Baking powder.

  • NOTE: (The dough will be dense and a little crumbly, but should stick when pressed together.)

  • Use a spoon and place in your hand and roll into balls

  • Then press and shape into (50 cent size) cookie. Flatten with your palm.

  • Bake for about 15 minutes, until the edges are lightly golden.

  • Allow to cool.
