Daddy's All time favorite "Bread pudding" BY JELES
(A Keto version of Sweet Maria's "Daddy's Mistake")
Ingredients:
BREAD:
1/2 cup melted butter
1/2 cup water
2 eggs
1 tbsp vanilla
1/4 cup Monk Fruit
2 cups Anthony's Almond flour
1 tsp baking powder
Sauce:
1 cup heavy cream
3 eggs
1/4 cup Monk Fruit
1 tbsp vanilla
2 tbsp melted butter
1 1/2 tsp cinnamon
1/2 tsp nutmeg
Topping:
1/4 cup Lily's Chocolate chips
1/2 cup of chopped pecans
1 tbsp Cinnamon
1tbsp Monk fruit
Instructions:
First Step: Bread
In a mixing bowl, stir together your melted butter, eggs, water, vanilla, monk fruit and mix well
Now whisk in your almond flour and baking powder
Pour into a greased or lined loaf pan and bake at 350* for about 45 minutes (until the bread is done when you stick a toothpick into the center and it comes out clean)
Set it aside
Next Step:
In a Large mixing bowl, whisk together your sauce ingredients (mixing well)
Once the loaf has cooled, tear it into chunks
1. Place the bread chunks into a casserole dish
2. Sprinkle the chopped pecans, chocolate chips through out the bread
3. Pour the sauce mixture onto the bread
4. Now sprinkle some cinnamon and monk fruit on top (just a little)
Bake at 350* for 45 minutes
