Sam's Stuffed Meatballs, BY JELES

Ingredients:

Meatballs:

1 lb Lean ground pork

1 lb ground beef

1 tbsp Italian Seasoning

1 Large egg

1/4 cup fresh parsley, finely chopped

3 tbsp of fresh basil

1/2 small onion, finely chopped

1 tsp salt

2 tsp ground black pepper

2 tsp Mrs. Dash (Garlic Herb) (salt free)

3/4 cup Anthony's Almond flour

1/2 cup grated parmesan

12 oz mozzarella cheese, cut into small cubes (Blocked cheese)

Sauce:

1 tbsp olive oil

1/2 small onion, finely chopped

1 (28 oz can) crushed tomatoes

1 bay leaf

2 cloves garlic, chopped

1 1/2 tbsp fresh parsley, finely chopped

1 tbsp basil, finely chopped

1 tsp black pepper

½ tsp Salt

Instructions:

Make the Marinara Sauce

Add the olive oil to a pan over a medium heat

Then add the chopped onion and sauté for 5 minutes

Next, add the chopped garlic, canned crushed tomatoes, bay leaf, black pepper, salt, basil and fresh parsley to the pan and simmer over low to heat for about 20-25 minutes

Who’s ready to “Make the Meatballs”?

Preheat your oven to 375*

Line one or two half sheet pans with parchment paper

Adjust the oven rack to the middle position

Slice mozzarella into 24 small chunks, set aside

In a large bowl, mix together ground meat, oil, onion, egg, almond flour, parmesan cheese, parsley, Mrs. Dash (herb), basil, salt and pepper

Mix just until combined, important *(DO NOT OVER MIX)*

Divide meat into 24 even pieces (golf size)

Wrap each piece around a piece of mozzarella cheese

Roll into a ball ensuring all of the cheese is completely covered by the meatball

Space evenly on the baking sheet

Bake for 30 minutes, rotating after 15 minutes

(If a little of the cheese leaks out, don't panic)

Serve with the homemade marinara sauce, and sprinkle with chopped fresh parsley, and basil if you like

Remove meatballs from the oven, gently stir into the sauce, and let simmer on the stovetop for an additional 15 minutes

Taste for salt and pepper!

Serve with your choice of Keto pasta or a nice salad!
