Avo’s Hearty Spinach Soup, BY JELES

INGREDIENTS:

2 tbsp extra virgin olive oil

2 tsp of minced garlic

1/2 pound Hot Italian sausage

1/2 pound Mild Italian sausage

1/2 pound of ground beef

1 small onion chopped

1 medium red pepper diced

1/2 medium Poblano pepper diced (poblano is a mild chili pepper)

3 celery stalks diced

1 tsp dried basil

1 tsp dried oregano

1 tsp dried rosemary

1 1/2 tsp chili powder

1 tsp ground cumin

Sea salt and black pepper to taste

3 cups chicken Broth

4 cups of Beef Broth

2 cups baby spinach

1 cups Cheddar cheese shredded

INSTRUCTIONS:

In a large pot, heat olive oil over medium-high heat

Add garlic, onion, sausage and ground beef, stirring occasionally, until the sausage is no longer pink inside

Using a wooden spoon break up the sausage into small pieces as it cooks

Add the peppers, celery, oregano, basil, rosemary, chili powder, and cumin, into the pot

Season with salt and pepper to taste, and then stir to combine

Cook while stirring occasionally until the vegetables have softened (5-8 minutes)

Add both chicken & beef broth (using both will bring out so much flavors)

Let simmer for 20 minutes, stirring occasionally

Add spinach and cook until the spinach wilts

Remove from heat

Serve warm and top it with cheese

Enjoy!

(This recipe can be Frozen, just do not add the cheese prior to freezing)
