Jeles’ Loaded Cauliflower Mash

Ingredients:

1 pound cauliflower

4 ounces sour cream

1 1/4 cup grated cheddar cheese (I cup for mixture) 1/4 cup for topping

4 slices of cooked bacon (chop bacon into tiny pieces)

3 tablespoons chopped chives (2 tablespoons for the mixture) (1 tablespoon for the topping)

4 tablespoons of Butter

1/4 garlic powder

1/4 teaspoon Mrs. Dash (salt free)

Salt and Pepper to taste

Directions:

In a pot, heat a cup of water

Cut the Cauliflower into florets and place it in the pot

Steam the cauliflower for 8-10 minutes

Drain the water and allow to cool 5 minutes or so

Take the cauliflower and place into a blender along with the sour cream, butter, garlic and Mrs. Dash

Pulsate until it’s soft and fluffy like mashed potatoes

Remove the mixture and place it in a bowl add half of the chives, cheddar cheese, salt and pepper to taste and mix well.

Preheat oven to 350 *

In individual corning wear dish add the mixture and top it off with a little more cheddar, chives, bacon and stick it in the oven for 5-6 minutes just to melt the cheese :)

Makes 6 individual servings (you can make it all in a Corning-ware dish,

*(I use my Oval Au Gratin Baking Dishes)

FINISH it off with: a dollop of sour cream and sprinkle chives
