Jeles’ Orange Pignolias Keto Cookies

Ingredients:

3 cups Almond Flour

3 tbsp Orange zest

1/2 cup of Pignolias (Pine Nuts)

1/4 cup Butter (softened)

2 oz Cream cheese (softened)

1/3 cup + 1 tbsp of Monk Fruit

1 large Egg

3 tsp Orange extract

1 tsp Baking powder

1/4 tsp Sea Salt

1 /12 tbsp Sour cream (optional)


INSTRUCTIONS:

  • Preheat the oven to 350 degrees. Line a large cookie sheet with parchment paper.

  • Use a spatula and mix together the butter, cream cheese, and sweetener, until it's fluffy and light in color.

  • Add in the Orange extract, salt and egg and mixing well.... Add in sour cream.

  • Add in the almond flour and Baking powder.

  • NOTE: (This dough will be soft like the texture of milk chocolate chip cookies :)

  • Use a spoon and place in your hand and roll into balls

  • Then press and shape into 2 inch cookie. Flatten with your palm or the bottom a cup.

  • If you decide to do the egg wash on top: take 1 Large egg yolk and add 2 tsp of Orange Zest and stir well. Take a brush and brush each cookie before placing it in the oven.

  • Bake for about 15-18 minutes, until lightly golden.

  • Allow to cool 10 minutes if you cam ;)

ENJOY!!!!! So soft

Makes 24 Cookies (2 inches)
