Jeles’ Orange Pignolias Keto Cookies
Ingredients:
3 cups Almond Flour
3 tbsp Orange zest
1/2 cup of Pignolias (Pine Nuts)
1/4 cup Butter (softened)
2 oz Cream cheese (softened)
1/3 cup + 1 tbsp of Monk Fruit
1 large Egg
3 tsp Orange extract
1 tsp Baking powder
1/4 tsp Sea Salt
1 /12 tbsp Sour cream (optional)
INSTRUCTIONS:
Preheat the oven to 350 degrees. Line a large cookie sheet with parchment paper.
Use a spatula and mix together the butter, cream cheese, and sweetener, until it's fluffy and light in color.
Add in the Orange extract, salt and egg and mixing well.... Add in sour cream.
Add in the almond flour and Baking powder.
NOTE: (This dough will be soft like the texture of milk chocolate chip cookies :)
Use a spoon and place in your hand and roll into balls
Then press and shape into 2 inch cookie. Flatten with your palm or the bottom a cup.
If you decide to do the egg wash on top: take 1 Large egg yolk and add 2 tsp of Orange Zest and stir well. Take a brush and brush each cookie before placing it in the oven.
Bake for about 15-18 minutes, until lightly golden.
Allow to cool 10 minutes if you cam ;)
ENJOY!!!!! So soft
Makes 24 Cookies (2 inches)
