Vivian’s Cheesy Broccoli Casserole by Jeles

Ingredients:

2 pounds broccoli florets

12 ounces riced cauliflower (90 second cauliflower rice packet~ do not place in microwave)

2 large eggs

4 ounces cream cheese, room temperature, cut in cubes

1/4 cup sour cream

1 can of Cream of Mushroom soup

1 1/4 cup shredded cheddar cheese

1/2 cup grated parmesan cheese

3 cloves garlic, minced

1/4 cup of chopped onions

1 1/2 teaspoon Italian Seasoning

Dash of Paprika

salt, to taste

1/4 teaspoon fresh ground pepper

Instructions:

STEP ONE:

Preheat oven to 350*

Grease a 3 quart baking dish with butter and set aside

STEP TWO:

In a large skillet, bring 1/2 inch of salted water to a boil.

Add the broccoli~ cover and cook over high heat until crisp-tender, about 4 minutes

Drain and transfer broccoli to prepared baking dish~ set aside

STEP THREE:

In a mixing bowl combine cream cheese, sour cream, can of cream of mushroom, eggs, onions, cheddar cheese, parmesan cheese, garlic, paprika, Italian Seasoning, salt, and pepper~ mix until incorporated

Take your 12 oz Cauliflower rice (90 second Cauliflower rice packet) and fold into mixture

Now take your mixture and add it to the broccoli and stir until thoroughly combine

OPTIONAL: For a crunchy topping, add 3/4 cups of crushed pork rinds to the top

STEP FOUR:

Bake in the oven for 20-30 minutes, or until bubbly and lightly browned on top

Remove from oven and let stand 5 minutes
