RECOMMENDED PRACTICE
Use Floor Plan type Callouts for blow-ups of areas in another plan (but NOT when you want to split a plan over several sheets, use Duplicate Dependant to do this), and use or Section type callouts for wall sections.
Use Detail View type Callouts for construction details.
CALLOUT TYPES
There are 2 types of callout types that can be created - Detail Views and Floor Plan or Section. You will see them in the Properties window.

Choose which sort you require before making your call-out, you can not change the type later on (see below for work around).
Note most of the types listed above are custom created. You can create new types by hitting the Edit Type button>Duplicate, type in a new name.
Views will list under these names in the Project Browser (if set up to do it).
VIEW CALLOUTS (Floor Plan, Section)
Use a Floor Plan type or Section type callout when you want to provide more or different information about a part of the parent view (e.g. 1:20, 1:50).
For example, you can use a view callout to provide a more detailed plan layout of fixtures in a bathroom, or a wall section that will have further details.
A Floor Plan type or Section type callout offers the same capabilities as its parent view. For example, you can specify another view to use as an underlay, assign a color scheme, and specify a view range. You can also add references inside these views types like internal Elevations, Sections and Callouts (both Detail and Floor Plan).
Floor Plan and Section callouts are listed under Floor Plans or Sections in the Project Browser.
DETAIL CALLOUTS (Detail View)
Use a Detail View type callout when you want to provide details about a part of the building model (e.g. 1:5, 1:10), and you intend to draw in 2D over the top of the model.
A detail callout is used to provide more constructional information than the parent view.
For a Detail Callout, you can specify whether its callout reference displays in the parent view only or displays in the parent view and intersecting views. For intersecting views, you can automatically hide the callout reference if the scale is coarser than a specified value.
Furthermore, you can specify whether the detail view uses the style and offset that you specify in the detail view parameters, or the same clipping as the parent view. (Section views use the Far Clipping parameter. Plan views use the Depth Clipping parameter.)
You can only add Detail View references to another Detail View, you can not add Elevations, nor Section or Floor Plan callouts to them.
Detail Views are listed together under Detail Views in the Project Browser. Revit does not distinguish between Detail Views that are in plan or section.
WORK AROUND IF YOU NEED TO CHANGE VIEW TYPE
Revit doesn't have a way of changing a detail view into a plan or section view.
Work around:
Create a new callout of the type you want.
Go to the old view. Turn off the model back ground; Properties>Display Model>Do not display.
Select all annotation objects and Copyclip (Ctrl C) them.
Go to new view and Paste>Aligned to same place.
Delete the old view.
