Mediterranean Pilaf

Adapted from Cookery for Entertaining


3 cups chicken broth
1 1/2 cups uncooked basmati rice
2 tablespoons vegetable oil
2 tablespoons butter
1/2 cup seedless golden raisins
1/2 teaspoon turmeric
1/2 teaspoon curry powder
1 1/2 tablespoons soy sauce

Place all ingredients into a 1-quart sauce pan. Bring mixture to a boil, cover and cook over low heat 20 minutes or until all liquid is absorbed and rice is tender. Makes 8 servings.
