Make 2 sandwiches
Cribbed from here and modifed to suit my preferred format
Place
8 large eggs
in a saucepan over med heat and cover with cold water. Bring to a boil, reduce to medium low; simmer 10 min. Place under cold running water until eggs are cool, and peel. Throw away 4 whites (or save for later use). Chop remaining eggs and 4 extra yolks.
In a medium bowl, mix
eggs
⅓ c mayonnaise
Salt
pepper
1 T chopped fresh dill
Serve on
4 slices bread
