Congratulations to the newlyweds!

Our Cresco Center Director was married over the Memorial Day weekend! Cassie Mae (Martin) Lichty and Joshua Thomas Lichty were married on Saturday, May 26. Joshua is a chiropractor at Cresco Chiropractic Clinic and also works on his family’s farm. The couple planned for rain, and the weekend turned out to be one of the hottest Memorial Day weekends in Lime Springs, Iowa history!

“We were lucky there were several other doctors in attendance because two people collapsed due to heat during our ceremony! We were married in the yard of the farm home Joshua grew up in, which is now our home where we will continue to help operate the family farm. This was very meaningful to us, as we were able to establish/plant our roots as husband and wife on a strong foundation that symbolizes so much to us and our families. We went on our weeklong honeymoon in Clear Lake at his family’s lake house, and we never checked our emails, did a lot of fishing, boating and relaxing! We are planning to go to Nashville, Tenn., when fall harvest is over.” Cassie Lichty

State General Aid Supports Impressive Student Outcomes

The Iowa legislature’s commitment to workforce programs allows the College to develop robust career pathways and improve access, while State General Aid (SGA) continues to make programming possible. The atmosphere during the SGA aid debate each year is a competitive one, with legislators beginning their debate on education funding for the K-12 system; once resolved, state lawmakers decide how much of the remaining education budget should be allocated among the Iowa’s 15 community colleges for the next fiscal year. The total amount of SGA to the 15 colleges is $201.27M for FY19; Northeast Iowa Community College’s allocation is $10,000,076 (nearly flat from the FY18 allocation of $9,926,071 and FY17’s $10,079,001). NICC and its community college partners continue to advocate in Des Moines by sharing the stories of graduates and their successful post-graduate outcomes. The infographic at right was shared with key state leaders and legislators in fall 2017, and the data shows impressive graduation outcomes of our students from 2010–2015.

Summer Meals that Don’t Heat up your Kitchen!

BLATs:

Nothing screams summertime more than a fresh tomato. One our family’s favorites is to make traditional BLT sandwiches with a twist – add sliced or mashed avocado for extra creaminess and healthy fat. Have you tried peppered bacon? It’s a must!

Mexican chicken bowl:

Make your own Chipotle burrito bowl. Soak the rice or quinoa prior to cooking the grains and this will expedite the cooking process. Have extra Cowboy Caviar? Add it to the bowl! Don’t forget to top with avocado, cilantro, lime and sour cream (or Greek yogurt for a lower fat version).

Couscous salads:

Couscous is so quick and easy to make and a great substitute for rice. You can find a plethora of recipes online that use couscous as a base.

Egg or Chicken salad:

Save money and buy a whole chicken and cook in a Crock pot, on a grill or in the oven (only heats up the house once). Use the meat throughout the week. Don’t like mayo? Try replacing with Greek yogurt!

Fish tacos:

Fish tacos are great because the fish can be pan-cooked quickly. Serve in tortillas with greens or cabbage for extra roughage or on a bed of salad greens. Mango cilantro salsa is a must try!

Sardines:

Sardines are very healthy fish with good fats and low on the food chain, and they are likely to have less mercury than bigger fish like tuna. Add olives, sun-dried tomatoes and/or feta cheese on a bed of couscous for a summery Mediterranean meal.

Grilled pizza:

One of my all-time favorite meals in any season is grilled pizza, which can be made on a gas or charcoal grill. It has a smoky, wood-fired taste when done.

Buy a pre-made crust (some pizza places sell plain crusts for purchase, i.e. Mabe’s) or make your own crust to save money. Be adventurous and try new combinations of toppings such as asparagus, tomatoes, eggplant, broccoli, basil, sweet potatoes, beets, squash, peppers, onions, garlic, etc.

Summer desserts:

Nothing beats fresh fruit when it’s in season. Berry picking is a fun family pastime in the summer, too! Add fresh fruit to a smoothie for a healthier dessert.

Ginger drink:

Try making your own ginger drink that’s fizzy and refreshing; it tastes similar to kombucha.

An Interview with "Linda Snowbird"!

(Friday Takeout’s editors decided to have a little fun this week! In this issue we interview "Linda Snowbird" to welcome her back after spending the summer away from the cold winter and rainy, chilly spring.)

Where is your destination of choice each winter?

So sweet of you to ask my dear. Your grandpa and I like to go New Mexico. It's like regular Mexico, but it still has that “new state” smell.

What do you like to do there?

So sweet of you to ask my dear. I like to knit and do my Sudoku. Your Grandpa sits on the porch and grumbles about politics while drinking too much. Ya know, retirement stuff.

It seems that as soon as you start to feel a slight chilly breeze, you're gone the next day.

Oh, it may seem silly to a young, strapping lad like yourself, but my rheumatoid arthritis gets really bad at a hint of cold, so we like to stay away from it. But between you and me, your Uncle Jack starts his seasonal unemployment around that time, and he's such a tool that we don't mind leaving a bit early. We really dropped the ball on Jack. Not like your mom. She's such a dear.

You say that you love Iowa and the people of the Midwest. If you love it so much, why don't you stick it out back home where all your friends and family live?

Oh, it may seem silly, but arthritis pain can be really unpleasant and mar my quality of life. If you love me so much (and I know you do!) why won't you let me go? Your Aunt Jackie also lives nearby and being near friends and family also means living near your Aunt Jackie. We really dropped the ball on Jackie and Jack. Not like your mom. She was always just perfect.

Florida and Arizona seem to rise to the top of the Snowbird Destination list each winter. Ever thought of mixing it up and spending the winter months in Ecuador, Spain or New Zealand?

Sweetie dear, only degenerates retire to Florida, and Arizona's full of posers. You don't think your Granny is a low-life poser, do you? Right now, we wouldn't consider Ecuador; even under a new political regime, the country still faces its ghosts of totalitarianism and human rights violations. And we're not allowed back in Spain after your Grandpa accused that nice man ... what was his name? He played midfielder for Barcelona's soccer team ... Andrés Iniesta! He was convinced that Andrés was cheating during a game of poker during the 2010 World Cup. Nice man. So handsome. And I won't go to New Zealand because I'm deathly afraid of hobbits and their two breakfasts and hairy feet.

What do you do around the holiday season? December is a busy, seasonal and special time.

So sweet of you to ask my dear. Well, there are usually a lot of holiday bonuses in World of Warcraft, so I like to log in and get those. Your Grandpa is usually grumbling about Andrés or the Packers or politics and drinks too much. We do always think about inviting your mom to come with us. Then maybe we just don't come back. Get a fresh start, ya know? Somewhere that the people aren't as nosy or judgmental. Did you have any other questions, dear?
