vegetarian sandwich

Nothing complicated about veggie sandwiches. Peanut butter and jelly and grilled cheese sandwiches are veggie. This is the kind of sandwich you might get in a restaurant for a few years after 2000 if you ordered the vegetarian sandwich. The ingredients listed here are for a lacto-ovo vegetarian diet. The cheese can be removed to go vegan. This recipe is a complete protein, and takes approximately 4 minutes to make. You can use regular bread.

  • 2 slices whole wheat bread or a whole wheat pita

  • 1 - 2 spoonfuls hummus

  • 1 slice provolone cheese

  • several pinches bean sprouts

  • 2 slices tomato

  • 3 cucumber coins

  • 1 - 2 leaves lettuce

  • avocado if desired

1. Lay out the whole wheat bread or whole wheat pita (or white bread, whatever you got).

2. Place the provolone slice on one bread slice or in the pita. Microwave for 25-30 seconds depending on how the microwave cooks. Open the pita fully immediately and leave open. If the cheese cools with the pita shut it will seal the pita shut. You can add Dijon mustard or other dressings/seasonings if desired.

3. Spread a spoon of hummus over the cheese.

4. Add the tomato, cucumber, bean sprouts, and lettuce to the sandwich or pita. Close the sandwich or pita.
