strawberry pie

I finally made this recipe Thanksgiving 2012 and can give some tips on it. The recipe as listed below produces a runny berry pie. If you want a firm pie I would suggest replacing the cornstarch with tapioca starch. Don't use pearl tapioca unless you prepare it prior. Otherwise you'll have a firm pie, but one with little pearls of tapioca studded through it, not very appealing. Speaking from 2012 experience. Guess the pie that nobody ate, lol. You could use flour but I haven't tried that yet and can't offer feedback.

Also, I personally would recommend decorating the top of the pie with additional sliced strawberries and doubling the amount of lemon juice to 2 tbsp. I would slice all of the strawberries to shorten the length of cook time on the stove. I might try layering the berries, with one sliced pint on the bottom, a jellied layer, and then the top decorated with more sliced. I have a feeling that this basic jellied strawberries approach might go well with a cream cheese pie. I'm imagining a graham cracker crust and layers of cream cheese pie and strawberry.

A serving of strawberries (1 cup) contains 149% of the daily value of Vitamin C, 2% of the daily value of calcium, and 3% of the daily value of iron. A serving of strawberries also contains 24 mcg of folate, 246 mcg of potassium, and antioxidants, whatever those are. But it sounds good. If taking anti-convulsant medications known to deplete folate in the body while pregnant, strawberries are a recommended part of the diet. This recipe works fine with a store bought or a homemade crust. Good luck!

  • 2 pints strawberries

  • 1 C sugar

  • 3 tbsp cornstarch

  • 1 tbsp lemon juice

  • 1 baked pie crust

1. Rinse the strawberries and remove the stems with a knife.

2. Take one pint of strawberries and combine them with the sugar, cornstarch, and lemon juice in a skillet over medium-high heat. Cook until the strawberries are soft and the sauce is thickened and bubbly. Stir frequently and mash the berries while stirring.

3. Place the other pint of whole strawberries in the pie crust. There is a link to a homemade pie crust recipe below. Pour the cooked mixture over the strawberries inside of the pie crust.

4. Allow the pie to chill for several hours to congeal the ingredients before serving.
